Cappuccino Dessert

Are you a coffee lover?  If so we have the perfect dessert to share with you this week.  The Cappuccino Dessert is so easy with the perfect blend of creamy, coffee, and chocolate.  You will love showing off this delicious dessert with family and friends.

The Cappuccino Dessert is another great recipe with Caffe’ Borghetti Espresso Liqueur.  Now you might be saying, “Rhonda and Craig, we already have seen lots of recipes with Caffe’ Borghetti.  Why do you use the same ingredients in most of your drinks and recipes?”  Well… there is a very intentional reason for that! First of all, Caffe’ Borghetti is a great product. If you are like us and like most people, who do not own a full service bar with hundreds of customers each week, you tend to use an ounce or two of a bottle of liquor for a couple of drinks.  Then the bottle sits in your bar area or on your pantry shelf for quite some time before you use it again.  We try to show you multiple uses for various products, so you can see that making a purchase of a bottle of liquor is not just for a beverage or two.  Many liquors are quite versatile and can be used for a variety of recipes.  The more recipes that we share with you to show you how to use products, the more you will be making the most of your purchases.

The Cappuccino Dessert is very easy and is a crowd pleaser!  We (Rhonda) made this dessert to share with our great friends, the Burkes, when invited to their house for dinner.  The ingredients you need for Cappuccino Dessert are: chocolate wafer cookies, melted butter, granulated sugar, egg white, cream cheese, heavy cream, Caffe’ Borghetti Espresso Liqueur, cocoa and chocolate sprinkles.

First you will need to make the crust.  Break the wafer cookies into crumbs.  Mix the crumbs with melted butter, egg white and sugar.  Press the mixture into the bottom of 9 x 9 inch baking pan.  Bake at 325 degrees for about 14 minutes.  Remove from the oven and let cool for approximately 30 minutes.

Next prepare the filling.  Place softened cream cheese and sugar in a mixing bowl.  Beat with an electric mixer on high until creamy.  Beat in half of the cream until stiff peaks form. Dollop half of cream cheese mixture over cooled crust.

Place remaining 1/3 cup of cream in a small microwaveable bowl.  Heat on high for about 20 seconds.  Add cocoa and stir until well dissolved.  Place cocoa cream mixture in freezer for about 10 minutes.  After ten minutes remove from freezer and add Caffe’ Borghetti.  Blend cream mixture into remaining cream cheese mixture.

After mixed, dollop on crust.  Smooth out cream cheese mixture swirling the two flavors of cream cheese mixture together.  Cover and place in the refrigerator for a minimum of 4 hours.  When ready to serve, sprinkle with chocolate shavings or chocolate sprinkles.  Then cut into squares.

Blackberry Kiwi Mocktail

For those of you who are still sticking to your diets and your healthy resolutions, we’re bringing back another mocktail this week: Blackberry Kiwi Mocktail.  This yummy little mocktail is a light, refreshing, fun drink to serve anytime of the year.  The fresh zest of blackberries, kiwi and mint flavors are a perfect combination for a little pick me up.

To make the spritzer you will need to plan ahead a bit by making some mint simple syrup. You are going to follow our simple syrup recipe, as usual.  After cooling the syrup, place 4-5 mint leaves in the syrup to infuse over night.  We make ours ahead of time and keep on hand in the fridge, so we are ready to add it to our favorite cocktails.  Don’t forget that we have a Stevia version of simple syrup, for those of you who are counting calories.

To make this fun mocktail you will need fresh blackberries, fresh kiwi, fresh mint, fresh lime juice, mint infused simple syrup, and sparkling water. To begin, muddle the blackberries, kiwi, mint leaves and lime juice in the bottom of a shaker.  Fill your glass with ice and pour muddled ingredients over ice.  Pour simple syrup and sparkling water into glass. Garnish with fresh blackberries and mint leaves.  So refreshing and delicious!

Hugs and Kisses for the Raspberry Mojito

Valentine’s Day is just days away.  You might have big intentions for your sweetie,  you might be keeping it low key, or perhaps you have a big Gal-entine’s Day celebration on the horizon.  No matter how your Valentine’s Day works out, we have a great little cocktail to share with you — The Raspberry Mojito.  This cocktail hits all of The Blind Pig’s major requirements.  It’s easy to make. It’s very tasty, and the raspberries and mint give it a punch of fresh.

We start with easy ingredients which are on hand in most liquor and grocery stores this time of year.  You will need a package of fresh raspberries, mint leaves, lime juice, cocktail-ready agave nectar, white rum, and Prosecco.  Strawberries are usually a popular berry around Valentine’s Day. However, we liked that the raspberries still give the drink a pretty pinkish color, but were a little different than the traditional fare.  The Prosecco gives it a touch of romance.  Guys, this is a great way to have a little bubbly, but show you made some extra effort to make a cocktail special for your sweetheart. Wink. Wink.

Place 6 ounces of raspberries in the bottom of a shaker and muddle along with the lime juice, agave nectar, and mint leaves.  Double strain into a wine glass.  Pour rum into the glass. Top off with Prosecco and add ice. Garnish with a stem of mint leaves and several raspberries.  What a lovely drink.

No Fuss Treats for a Super Super Bowl Party

Have you heard that we are kind of excited about the super bowl at The Blind Pig house?  Believe it or not, we are not going to have a huge party, because we want to be able to focus on the game (and commercials). We are only having a few peeps over.  Whether you are having a huge party or watching the game with just a small group, we thought we would highlight a few of our recipes that can be game day ready in a flash!

We are breaking this post into three categories: beverages, sweet stuff, and munchies.  To find what you are looking for you can scroll to the category you want or take your time and explore all of it.

Large Batch Drinks: For the big game you may not want to spend your whole time in the kitchen mixing drinks.  We get it!  That is when it is convenient to have a large batch ready to go.  A sangria is always a winning large batch recipe.  You can fix a day or hours ahead of your party. Our favorites are  Bianco Sangria and Carpano Antica Sangria.  If you have a punch bowl, you cannot go wrong with a delicious punch. Although Jingle Gin Punch was intended for the Christmas season, it is a winning cocktail year round.  You can always re-name it Victory Punch for the party.  Seagram’s Peach Punch is also easy and a crowd pleaser at the same time.  All you need is some Seagram’s vodka, sliced peaches, and lemonade.  Can’t find peaches in the grocery store this time of year?  Add any fresh fruit to give your punch a winning appearance.

Mix it Up:  If mixed cocktails are what your crowd is into and you don’t mind spending some time away from the game, here are some cocktails that will help you score points with your friends.

We introduced you to Arrowhead Punch in last week’s post.  This red beverage is what our friends are going to be served during the game.  Another great red beverage is The Love Triangle.  We originally created the Love Triangle for our first Valentine’s Day, but it is a winner anytime of year.

A good play that always works is a great Skinny Margarita!  Other margs that can be sipped on at kickoff are: Merry Margarita and Strawberry Basil Margarita.

Fernet and Coke is the drink of choice for Argentinians when they watch a big football (soccer) game.  Maybe it’s time that Americans are introduced to this great beverage while watching their favorite sport?

Sweet Stuff:  This is Rhonda’s favorite category.  Not only are these treats easy to make, but they are sooo delicious.  If you walk in to a Super Bowl party with one of these in your hand, you will gain a lot of fans.  The first one that moves our chains is Borghetti Brownie Caramel Delights, all you need is a brownie mix, some Rolos and some Caffe’ Borghetti Espresso Liqueur.  Dip these in chocolate and you are good to go!

Rhonda took our Easy Espresso Cake to work this week for a super bowl pig out.  Rename it Chiefs Kingdom Cake.  Decorate with some Chiefs flags and your crowd will be dancing like Travis Kelce. Two other easy treats are Salted Whiskey Caramel Corn and Twisted Missouri Mud Brownies.    You can not go wrong with some fondue at your party.  Make Caramel or Chocolate fondue with some sliced fresh fruit and cubes of sponge cake.  Field Goal!!

Munchies: If you want to serve some substantial munchies at your party, Cola and Whiskey Brisket is a good place to start. Serve with some Corralejo Lime Guac and Tequila Ceviche.  Yummo!
