Just Peachy Popsicle Post

Who said kids get to have all of the fun in the summer? Peach season is in full swing  here in Texas, and Blind Piglet #1 loves her some fresh  peaches! We planned on writing an adult popsicle post for quite some time, so we decided to combine two things we love into an ultimate Just Peachy Popsicle Post!  If you google adult popsicles there are lots of fun posts out there to tantalize your taste buds and keep you cool poolside.

Our Just Peachy Popsicle is a basic recipe that includes fresh peaches and fresh strawberries, some orange juice, pineapple flavored vodka and a little bit of Peach Schnapps.

First pit and slice one fresh peach into thin slices.  Slice 4-5 strawberries.  Place in a bowl with 1 tablespoon of sugar and a splash of vodka.  Let sit for about 15 minutes.

While the fresh fruit is sitting, combine orange juice, peach schnapps, vodka, 3-4 fresh strawberries and a fresh sliced peach into a blender.  Blend together until well blended.

Prep popsicle molds.  Evenly spoon fresh fruit into the molds.  Pour liquid from blender into molds, and place  into freezer for several hours.

Serve popsicles when frozen solid.

The Just Peachy Popsicle is the perfect afternoon snack for a party of one or a party of six. These popsicles have a light punch to make you feel like you are having a special  afternoon treat.

They are great to make ahead and keep on hand for when you are feeling like a little indulgence or your best friend comes over for an afternoon swim.

Happy Memorial Day with a Toffee Surprise

Although the past couple of months have felt like years, we have finally made it to the unofficial start of Summer.  Congratulations!  Last night The Blind Pig Family watched Blind Piglet #2 graduate from high school in a  semi-graduation made for the era of social distancing.  With some closure on the school year, we are ready to feel the good vibes of summer and social distance ourselves from constantly thinking about COVID.

If you are bringing on those good vibes at the lake or beach this weekend or you are hanging out in your own backyard, we have a delicious and extremely easy dessert you can make.

To make the Toffee Surprise you need only three ingredients: your favorite vanilla ice cream, Heath toffee bits, and Caffe’ Borghetti Espresso Liqueur.  We made our dessert with Blue Bell’s Vanilla Bean ice cream, and you can find the Heath Toffee bits on the baking aisle of your grocery store.  If you can’t find the toffee bits, you improvise by purchasing Heath bars and breaking them into tiny bits.

Place 2-3 scoops of vanilla ice cream into individual serving bowls or glasses.  Sprinkle with the toffee bits.  Don’t be afraid to be generous with the sprinkling!  Finally drizzle Caffe’ Borghetti over the top of the toffee bits and ice cream. Then you are ready to serve!  If you want to make your dessert ahead of time, you can prep the desserts and place in the freezer until ready to serve.  The Borghetti will solidify some, but it still has a great flavor and appeal!

Menty Brownies

 During this time of COVID, comfort foods are making a come back, and what is more comforting than a pan of brownies right from the oven?  Brownies are an easy versatile goody to bake.  You can make them from scratch or make them from a box.  No matter how you mix these treats up, they are easy crowd-pleasers for a variety of occasions.

We always keep a couple boxes of brownie mix on hand, because the piglets wander into the kitchen a few times a month and decide to mix  up a batch.  This week we are sharing a fun and incredibly easy Blind Pig Twist on your favorite brownie recipe.

Our version of this American classic is made with a hint of Brancamenta Liqueur and some Andes Mints layered in the middle.  The minty goodness enhances the flavor of the chocolate and is a tantalizing variation on the traditional chocolate brownie.

As we said above, start with your favorite brownie recipe.  To enhance the mint flavor of the brownie add 1/2 ounce of Brancamenta Liqueur to the batter when mixing.

Prepare your baking pan as usual with cooking spray.  Pour 1/2 of the batter into the bottom of the pan.

Place a layer of Andes mints evenly over the bottom layer of batter.

Top off with the remaining batter.  Bake as directed.

After  removing the brownies from the oven, allow the brownies to cool.  Cut into small squares and serve.

As you can see in our photos, there is a small sliver of the Andes mint that can be viewed from the side of the brownie.

These brownies have the right amount of mint flavor — not too much not too little.  One word of warning to you. These did not last long at The Blind Pig household.  If you do not intend to share these with others, DO NOT make them when others are present!

Just as its name suggests, it is a great cocktail for the middle of the afternoon.  A little rye whiskey, ginger ale and few other ingredients make this cocktail pair nicely with a light dessert.

Savannah Special

We discovered this yummy cocktail last spring for our daughter’s graduation celebration.  Fresh blackberries, whiskey and sparkling wine are the main ingredients. This one goes great with a slice of cake!

Sparkling Lemonade

Mix up some of this lemonade made with elderflower liqueur, lemon juice and prosecco, and enjoy a visit on the front porch with mom.

Tickle Me Pink

Not only is the drink knock out pretty, it will make any mom feel appreciated and loved.  The rose’ sangria is a yummy summer cocktail.

Celebrate Cinco de Mayo with a Raspberry Margarita!

Cinco de Mayo is in a few days! We always look forward to this fun occasion, not because we have any Mexican heritage, but it is like a slight nod that summer is soon to follow.  With everything that we have been enduring, we feel like many of us are ready for a little sunshine and escape even if we are sitting in our own backyard pool!

We kicked off our little blog in our tiny stake of the internet 4 years ago on this very weekend with a cheers to Cinco de Mayo and our ultra-fav Skinny Agave Margarita.  This is our summer signature cocktail, as many of you know.  We have shared with you a few variations over the years.  This year we have another delicious variation that you are really going to love!!!

The Raspberry Margarita recipe makes a batch of about 4 cocktails.  You will need Grand Marnier, your favorite tequila, fresh and frozen raspberries, fresh lime juice and cocktail ready agave nectar.  Place all of the ingredients into a blender until well blended.  Pour into serving glass over ice and garnish with fresh raspberries.  Yummo!
