Holiday Aperol Spritz

How are your holiday preparations coming along?  Since we were out of town so much the past two weeks with Piglet sports (Bucket List Adventure), we feel like we are still playing catch up.  We finally finished putting up the Christmas decorations last night.  (We know… this is way behind schedule for the Blind Pig Household.)  However, Craig got the outside lights up and looking festive and Rhonda finally finished the inside.  Now we can concentrate on entertaining, baking and shopping. Gish!

This week we have a delicious little cocktail just right for spreading holiday cheer.  This cocktail is light and refreshing. If you have been around our little blog for very long, you are well aware that Rhonda has an affinity for anything titled spritz — especially if there is a little Prosecco involved.  This cocktail is festive without the feeling of weighing you down like a heavier or cocktail or a glass of wine.  In fact, Rhonda is having a little soiree with some friends this week and plans on serving it to her friends.

Aperol, cranberry juice cocktail (we used sugar-free), grapefruit juice, Prosecco, a slice of orange, a handful of fresh cranberries and a sprig of fresh rosemary are all you need to create this spectacular cocktail.

Pour the Aperol, cranberry juice and  grapefruit juice in a rocks glass filled with ice.  Stir together. Top off with Prosecco and garnish with cranberries, orange slice and rosemary sprig.

The Spritz of Summer: Strawberry Aperol Spritz

Summer is now in full swing at The Blind Pig household, and what can make summer better than the perfect summer cocktail?  It is no secret around here that Rhonda loves anything that has spritz in the name, and  lately the Aperol Spritz has been her go-to drink of choice.  It’s low hassle and easy to order or make. We paired this popular drink with strawberries, because what says summer better than anything with strawberries?

This cocktail is very easy to make, but you will need to plan ahead. A day or two prior to making the drink you will need to slice some fresh strawberries and infuse them with some Aperol.  We only infused about a cup of Aperol with a cup of strawberries, because we knew we were only going to be making a few drinks at a time.  If you are planning on making Strawberry Aperol Spritzes for a crew, then you may want to infuse a half of a bottle or more.  Place the Aperol and strawberries in the fridge and wait one to two days.  🙂

When you are ready to serve your drinks, you will need fresh strawberries and orange slices for garnish, strawberry infused Aperol, and a bottle of your favorite chilled prosecco.  Since Aperol Spritzes are usually served with a large cube of ice, make sure you have some on hand.

Add 2 ounces of strawberry infused Aperol to the glass with large cube of ice.  Pour 4-5 ounces of prosecco over the top.  Lightly stir.  Garnish with an orange slice and fresh strawberries.  Delish!

We were surprised by the hint of the sweet strawberries that came through and the Aperol did not overpower the strawberries.  The orange slice gave the drink a nice hint of citrus.  We are used to serving our Aperol Spritzes with an olive, but now may switch to the orange!

A Better Aperol Spritz

aperol spritzHello Friends!  How was your week?  We have been busy around The Blind Pig Headquarters searching and trying out a lot of new recipes to share with you!  However, before we move on to something new, we wanted to share a classic cocktail with you that we feel we have actually made a little bit better.

Remember a couple of months ago when we went to California for a much needed anniversary trip?  We stayed at our friend Mike’s house and he offered to make us an Aperol Spritz.  Normally, Rhonda perks up at anything with the name of spritz because she knows it contains prosecco or something else bubbly and delicious.  However, Rhonda has tried Aperol Spritz’s in the past.  They were all the rage when she visited Blind Piglet #1 in London last spring.  This classic cocktail has been a little bit heavy on the Aperol side, which takes some acquired taste.  However, Mike’s Aperol Spritz was very drinkable and delicious.  So Mike shared his secret sauce with us!

To make an Aperol Spritz you need: Aperol, chilled prosecco, and olives in saltwater.  What is Aperol?  Aperol is an apertif made in Italy.  It has a bitterness to it — thus why Rhonda did not like the flavor. The olives we used were purchased at Whole Foods.  You want to make sure to splurge and buy some higher end olives to round out the bitterness of the Aperol.  And while you’re at it — toss in more than one.

Place a large cube of ice in your glass.  It is very trendy to now serve an Aperol Spritz in a large cabernet wine glass.  Since it is a classic cocktail it also has a distinct appeal in a rocks glass — especially when you use a large block of ice.  Next pour in a ounce and half of Aperol over the ice.  Pour 2 ounces of chilled prosecco over the Aperol.  Finish with an olive or two.  Sip and Savor.  If the Aperol is too strong for your taste, just add a little more prosecco to your glass.
