Seeing Red

You may have noticed that our fav NFL team, the red-wearing Kansas City Chiefs are in the Super Bowl again this year? Since our beloved Chiefs are in the super bowl, and February is the month of love. We decided to celebrate with posts that are all about seeing RED!

To start you off on a red streak we are sharing a magnificent red cocktail today.  The pomegranate martini.  Do you remember when we mentioned a couple of weeks ago that we realized that there were some favorite recipes of ours that we had not shared with you in the past?  This pomegranate martini is one of those recipes. This yummy, citrusy cocktail is the basic pomegranate cocktail recipe with a few slight Blind Pig adjustments.

Unlike most martinis, we made ours with gin instead of vodka.  To make it taste even better, we used the Malfy Con Arancia Gin, which is blood orange flavored.  This gives the martini an extra citrusy pop!  If you want your martini to bubble a bit, you can also add a splash of sparkling water to the glass.

To make our version of the Pomegranate Martini you will need Malfy Con Arancia Gin. You also need cointreau, pomegranate juice, fresh lemon, fresh orange and pomegranate seeds.

Fill a shaker of ice and add the gin, cointreau, juice and squeeze lemon.  Shake for 20 seconds.  Pour into a martini or coup glass.  Garnish with a slice of orange and some pomegranate seeds sprinkled on top.

The World’s Best Selling Classic Cocktails

Drinks International updated its list of 50 of the World’s Best Selling Classic Cocktails, and we couldn’t help but notice that we have shared recipes for many of the drinks that made it onto the list.  These unprecedented times have spurred many individuals to learn to make some delicious drinks at home that they used to enjoy at their corner bar or favorite restaurant. Let’s take a look and see what cocktails rank at the top of your list and ours.

#38 Tommy’s Margarita:  Although we don’t call ours Tommy’s Margarita, our Skinny Agave Margarita is very close to the same recipe.  We can’t enjoy a margarita prepared any other way!

#22 Paloma: This refreshing tequila beverage is a favorite of ours, especially during the summer months.

#21 French 75: We shared this eloquent cocktail with you during the last World Cup.  Like a beautiful string of pearls it is classic and never goes out of style.

#18 Boulevardier: Since the roaring 20’s this has been a classic cocktail that is enjoyed by many.  Our past post has directions for making a barrel aged version or a single serve cocktail.

#15 Dark and Stormy: Want a classic cocktail that is easy to fix and easy to drink? With basically two easy ingredients, the Dark and Stormy may be the cocktail for you.

#11 Bloody Mary: This is the cocktail choice of breakfasts and brunches everywhere.  Who doesn’t love a good Bloody Mary with over the top garnishes?

#5 Margarita:  Shocked?  We aren’t. All restaurants and bars have a classic marg on the menu.  We have several variations of this extremely popular drink.

#4 Dry Martini:  Although the martini isn’t at the top of our love list,  we can’t deny it is popular.  We shared a post about this with you during quarantine.

#3 Daiquiri: We are not fans of overtly sweet cocktails, but apparently the daiquiri has never lost its spot near the top of the popularity poles. Our Menta Daiquiri focuses more on the Menta and less on the sugar.

#2 Negroni: Another one of Craig’s favs, this alcohol forward drink is quite satisfying. Our version is an all Italian cocktail with Italian gin.

#1 The Old Fashioned:  Apparently the World’s Best Selling Cocktail is not as out of fashion as its name may suggest.  Our recipe is a Rose Old Fashioned try it out and enjoy!

Ten Holiday Cocktails to Make Everything Merry and Bright

Christmas Eve is upon us and you are most likely wrapping your final gifts and delivering special goodies to friends and family.  Craig is going to play Santa this afternoon and deliver our family holiday goodie baskets to friends and neighbors.  As you are making your final holiday plans we thought this would be a great opportunity to remind you of some special holiday cocktails.  Any of these spirited drinks pair nicely with a fire and some Christmas cookies, or make a great after dinner drink on Christmas day.

Christmas at The Blind Pig household has been pared down this year.  We are not traveling to see family, nor are we gathering with big groups, but these cocktails can help to make our celebration a little brighter as we look toward 2021 with hope and anticipation.

  1. Midnight Spice: This cocktail is one that we shared with you several years ago, it makes a delicious dessert cocktail.  It is also great for sipping on a little something around the fire.
  2. Spiced Manhattan was introduced to you as a Fall drink, but its bold flavor holds its own with rich holiday foods.  It’s the perfect cocktail for an evening toast.
  3. Punt e Mes Margarita: Margaritas are always a crowd pleaser.  This recipe has a robust flavor from the Punt e Mes. What better way to toast to Feliz Navidad!
  4. Punt e Mes Sangria: Are you making cocktails for a crew? The rich, bold flavor of the Punt e Mes Sangria will not only please your guests, but it will also keep you from mixing drinks as you entertain.
  5. Jingle Gin Punch: One of Rhonda’s all time favorites from The Blind Pig. How can you celebrate the holidays with out a little punch?
  6. Holiday Margarita: We took the popular margarita and added a little holiday to it.
  7. Merry Margarita: Another one of The Blind Pig Blog’s favs, this margarita is so easy to make, and yet so festive!
  8. Holiday Aperol Spritz: If you are a fan of the Aperol Spritz, this is fun way to spruce up the spritz as you celebrate.
  9. Pomegranate Paloma: This cocktail has been our house go to during the holiday season.  It is so pretty and festive and easy to mix.
  10. The Mistletoe: Another winner gin-based cocktail that has few ingredients and requires little prep.  You may even be able to earn an extra kiss from your sweetie if you mix up this beverage.

The Blind Pig Berry Festival

Fresh vegetables and fruits are one of our favorite parts of summertime blog posts, which is why one our most used tag lines is: Easy, Tasty, Fresh!  As we looked back at past blog posts, we realized some definite patterns in our posts.  One pattern that overwhelmingly stood out to us was how many recipes that we had with berries.

Berries are the best — nature’s candy! Berries complement many cocktail and dessert recipes, so this week we are going to feature some of our past posts that included berries, such as, Strawberry Prosecco Cake or Tequila Strawberry Lime Ice Cream Pie, both of which we have made recently at The Blind Pig household.   Welcome to our Berry Festival by taking a look back with us.  Perhaps this is a good time to try out one of these fabulous recipes that you haven’t tried yet.

Strawberry Prosecco Cake

This dessert requires a little extra effort, but is certainly worth the effort.  The sponge cake is drenched in prosecco and frosted with a whipped cream frosting.  Delish!  It’s the ultimate summer dessert.

Tequila Strawberry Lime Ice Cream Pie

Tequila Strawberry Lime Ice Cream Pie is an easy dessert that will impress family and friends.  The salty pretzel crust pairs nicely with the sweetness of the strawberry ice cream and tequila.

Prosecco Summer Dessert

Prosecco Summer Dessert is such an easy summer dessert, you will wonder why you haven’t made it sooner.  Made with angel food cake, fresh berries, cool whip and vanilla pudding, it is ready for guests in no time.

We couldn’t complete this post without suggesting an easy berry lemonade to fix for your picnics and lake trips.  A few simple basic ingredients and you are good to go with some spiked berry lemonade!!

Best Dressed Drinks

Just like the right accessories for your favorite outfit, the trend in cocktails is the more embellished, the better.  Any trained chef will tell you that the presentation is almost as important as the taste.  We have wanted to write this post for more than a year, but always seemed to have a more urgent recipe or idea that we wanted to share with you.  Once we started exploring the idea of cocktail garnishing we realized that this topic goes much deeper than a cute umbrella in your pina colada!  This post is going to focus on some common and easy ways to garnish a cocktail.

In our  Orange  Basil Spritzer, we glazed some blood red oranges with some sugar and a creme brulee torch. Then we added a whole basil leaf as a float.

First you want to make sure that the aroma and the flavor of your garnish pairs well with your drink. You don’t want to stick a cube of cheese with tequila based cocktail or pair watermelon with a bloody Mary.  Or maybe you do?

In our Orange Anejo Sour we use the froth from the egg white to help our slice of orange float.

There are a variety of items that you have around your kitchen that can easily be used or purchased to give your cocktails a little extra flair.  Here are some of our favorite choices for garnish.

Use Fresh Fruit. The easy choices are fresh fruits.  Place a slice of citrus, such as, a lime wheel or a slice a pineapple on the edge of the glass.  It is simple, but still adds a pleasing visual to your cocktails that entices the senses.

The layering effect of the wine, square ice cube and a dehydrated lime wheel give an interesting visual for our fall cocktail the Rojo.

Use citrus peels. Using the peel of citrus is a very popular way to garnish cocktails.  Use a peeler to peel off a piece of the peel.  You can simply plop the peel into the cocktail or you can ribbon it through with a cocktail skewer for a fancier look.  Fine ribbons of peel are popular to use.  You can spiral them around the glass or twist them around a skewer into a cute little spiral.  We have even seen bartenders take citrus peels and fold them like origami into cute sculptures to place on the edge of a glass.

In the Spiced Manhattan we ribboned a lemon peel through a skewer and added some Luxardo cherries.

Use berries. While we are on the topic of fruit, don’t forget about fresh or frozen berries.  Berries can easily be placed on a skewer, toothpick or just plopped in the glass or pitcher as a float.  Berries are one of the easiest ways to add color and some added appeal to a cocktail.

Use fresh herbs. Sprigs of fresh herbs also make a great garnish.  Not only is this an easy garnish to use– all you have to do is snip it and place it in the drink.  We love to use fresh herbs in the summer.  We just go out to our garden snip a few herbs and head back inside — instant garnish.  Herbs that we often use for garnish are: thyme, basil, rosemary, and mint.

Use vegetables. Vegetables are often forgotten as a garnish for cocktails, but can make a very effective display.  One of our go-to vegetables to use is cucumber.  We like add slices or long strips of cucumber to summer drinks.  Other great vegetables to use for garnish are carrot strips, pickles, asparagus, celery, tomatoes (yes, its a fruit…), and little baby corns.

Double Thyme is garnished with fresh thyme and a sliver of cucumber.

Bacon, peppers, celery, and shrimp anything goes in this Bloody Mary.

Don’t forget the ice!  The kind of ice you choose and what you put into the ice can also be used to impress your guests with a very visual cocktail.  We share some of our ideas about ice with you years ago in our Ice, Ice Baby post.

Use fun trinkets. You can use non-edibles in your cocktail, like colorful straws, cute stirrers, cocktail umbrellas or other funny little trinkets.

The Menta Daiquiri looks like a party on the beach with a cute umbrella.

Make sure to layer. The real artwork in garnishing comes from layering several of these ideas together into a spectacular visual display.  Depending on the look you are going for, the crazier the better.

It’s all in the details. Whether you are serving a glass of sparkling water or a bloody Mary to your guests, take time to prep for a special garnish.  It makes any beverage look best dressed and makes your guests feel a little more pampered.  What is your signature garnish?  We would love to hear your ideas.  Look for future posts on garnishes.  We still have more ideas to share with you.

No Fuss Treats for a Super Super Bowl Party

Have you heard that we are kind of excited about the super bowl at The Blind Pig house?  Believe it or not, we are not going to have a huge party, because we want to be able to focus on the game (and commercials). We are only having a few peeps over.  Whether you are having a huge party or watching the game with just a small group, we thought we would highlight a few of our recipes that can be game day ready in a flash!

We are breaking this post into three categories: beverages, sweet stuff, and munchies.  To find what you are looking for you can scroll to the category you want or take your time and explore all of it.

Large Batch Drinks: For the big game you may not want to spend your whole time in the kitchen mixing drinks.  We get it!  That is when it is convenient to have a large batch ready to go.  A sangria is always a winning large batch recipe.  You can fix a day or hours ahead of your party. Our favorites are  Bianco Sangria and Carpano Antica Sangria.  If you have a punch bowl, you cannot go wrong with a delicious punch. Although Jingle Gin Punch was intended for the Christmas season, it is a winning cocktail year round.  You can always re-name it Victory Punch for the party.  Seagram’s Peach Punch is also easy and a crowd pleaser at the same time.  All you need is some Seagram’s vodka, sliced peaches, and lemonade.  Can’t find peaches in the grocery store this time of year?  Add any fresh fruit to give your punch a winning appearance.

Mix it Up:  If mixed cocktails are what your crowd is into and you don’t mind spending some time away from the game, here are some cocktails that will help you score points with your friends.

We introduced you to Arrowhead Punch in last week’s post.  This red beverage is what our friends are going to be served during the game.  Another great red beverage is The Love Triangle.  We originally created the Love Triangle for our first Valentine’s Day, but it is a winner anytime of year.

A good play that always works is a great Skinny Margarita!  Other margs that can be sipped on at kickoff are: Merry Margarita and Strawberry Basil Margarita.

Fernet and Coke is the drink of choice for Argentinians when they watch a big football (soccer) game.  Maybe it’s time that Americans are introduced to this great beverage while watching their favorite sport?

Sweet Stuff:  This is Rhonda’s favorite category.  Not only are these treats easy to make, but they are sooo delicious.  If you walk in to a Super Bowl party with one of these in your hand, you will gain a lot of fans.  The first one that moves our chains is Borghetti Brownie Caramel Delights, all you need is a brownie mix, some Rolos and some Caffe’ Borghetti Espresso Liqueur.  Dip these in chocolate and you are good to go!

Rhonda took our Easy Espresso Cake to work this week for a super bowl pig out.  Rename it Chiefs Kingdom Cake.  Decorate with some Chiefs flags and your crowd will be dancing like Travis Kelce. Two other easy treats are Salted Whiskey Caramel Corn and Twisted Missouri Mud Brownies.    You can not go wrong with some fondue at your party.  Make Caramel or Chocolate fondue with some sliced fresh fruit and cubes of sponge cake.  Field Goal!!

Munchies: If you want to serve some substantial munchies at your party, Cola and Whiskey Brisket is a good place to start. Serve with some Corralejo Lime Guac and Tequila Ceviche.  Yummo!

The holiday haze is almost clearing around The Blind Pig household.  Everyone will be back to school and work next week.  We had such a wonderful holiday season.  In early December we visited Blind Piglet #1 in NYC.

Later in December we were with family and friends in Missouri.  Our niece got married, and we took in a KC Chiefs football game.

We came back home to Dallas and lucked into some tickets to go to the NHL Winter Classic.  No one can ever accuse our family of not making the most out of time off of work and school.

We brought this one to you because Negroni’s originated in Italia.  It is almost sacrilegious to create a Negroni without all Italian ingredients.  Enjoy this cocktail the way it was meant to be enjoyed.

Life Is Short Make It Sweet

This yummy Prosecco twist on traditional strawberry shortcake is a showstopper.  It is the perfect spring and summer dessert to serve.

This yummy autumnal cocktail is simple and refreshing.  It is just right for when the cool Fall days start to hit.

Cocktails to Ring in the New Year Right

Blind Pig Friends, how was your Christmas?  Ours was great.  We took in some travel to Kansas City to see friends, family and attend our niece’s wedding. We were a little busy over the past week, so we apologize for our absence.  However, we hope that you visited our site to look at some of our recipes for the holidays!

We feel like we have so much to tell you about what we’ve been doing this past month, but tonight is the night to party.  Many of you have been contacting us for cocktail ideas for New Year’s.  You can use any of our beverages that are on our beverages page, but to make it easier for you, we are highlighting a few of our favorites below.

The Ball Drop (The Moon Walk)

We originally developed this drink to commemorate the 50th Anniversary of the Moon Walk, but change the name and call it The Ball Drop.  Your friends will love this easy to make cocktail.

Jingle Gin Punch

This large batch punch is the perfect cocktail for a party.  Mix it up early in the day and let friends serve themselves.  This punch is one of Rhonda’s favs!

Merry Margarita

How can you go wrong with a festive margarita?  This margarita has only a few extra basic ingredients, and margs are always a crowd pleaser.

Cranberry Rum Slush

This yummy, icy cocktail is on the sweet side, but a delicious cocktail with a little sparkle for any NYE.

Holiday Aperol Spritz

We shared this one with you a few weeks ago. It’s easy to make and a fun way to celebrate with a spritz.

French 75

This light classic cocktail has been popular for a century.  Look back at the 1920’s while peering into the 2020’s with a delicious French 75.

Saturday in the Park

It’s Spring Break here at The Blind Pig household.  We definitely have Spring Fever, and we are looking forward to a much needed break.  To kick back and relax this week we have an easy, tasty, fresh cocktail to share with you that is as effortless  as a Saturday in the Park.  It is light, refreshing, and the perfect cocktail for a little day drinking on the porch or patio.

To make this refreshing cocktail you will need a few fresh ingredients: fresh squeezed lemon juice, cucumber, strawberries, and basil.  You will also need some rye whiskey, simple syrup, and some diet ginger ale.

To start, muddle a slice of cucumber, a strawberry, and a basil leaf in the bottom of a shaker.

Pour in simple syrup, rye whiskey and fresh squeezed lemon juice. Add ice and  shake for 15 seconds.

Prep a tall thin glass with ice and lemon peel.  Double strain cocktail into serving glass.  Top off with diet ginger ale. (We like to use diet ginger ale to cut down on the calories, and to prevent the drink from tasting too sweet.) Garnish with strawberry and cucumber and pretty paper straw.

Upon taking your first sip, you will notice the initial sweetness of the rye whiskey with the basil and strawberry.  The drink finishes off with a delicious refreshing surprise of the cucumber.  It is like drinking spring from a glass.

We love hearing from our readers through Facebook, Instagram and especially in person.  We have so much fun creating our blog posts and hope that you look forward to receiving them in your inbox each week.  This week we are taking a break from sharing more recipes with you to answer some commonly asked questions about The Blind Pig Blog.

  1.  What do you do with all of the drinks and food that you create for the blog?  That’s an easy answer… we drink and eat them.  Many of the drinks and recipes that we make for the blog have made it into our regular rotation.  We love to share the food we make on the blog with friends and family, so what are you doing next Friday?
  2. Does everything you make contain “The Blind Pig” twist?  No.  We make plenty of food and drinks on a daily basis that do not contain extra libations at all.  In fact, when we are not cooking things up for TBPBlog we try to eat fairly healthy.  Actually, Blind Piglet #2 prefers recipes that we make without a twist.
  3. Do all of the recipes and concoctions you make get featured on TBPBlog? No.  We try all of our recipes out at home before posting.  Many of the recipes we try get tweaked and adjusted before making it to the blog.  Some we try and nix altogether.  Some recipes we prepped, took photos, and then never made it into the queue.  We try to bring you relevant recipes with current trends and if we just don’t feel confident with a recipe, we don’t post it.
  4. Do you get paid to feature certain products on your blog?  Not currently.  Everything that we feature on our blog is because we believe in the quality of the product.  We like to feature products from smaller companies when we can.  When our blog grows up and we get the opportunity to be paid for a feature, we will be sure to be transparent about it with our readers.
  5. How do you decide what you want to blog about?  We think about what kind of entertaining our readers may be planning for in the near future.  If there is an upcoming holiday, we want to give you some ideas to serve your guests.  Throughout the year we are on the lookout for ideas to include in the blog.  Rhonda has a huge file of recipes that she has kept throughout the years.  When we need some inspiration we look through Rhonda’s files.  When we find something that interests us, we play with the recipe and tweak it to make it relevant and current.
  6. What is your favorite ingredient to use in TBPBlog posts?  For Rhonda it is Kerrygold Irish Cream.  The chocolate flavor makes it so easy to add to many dessert recipes, and we have been surprised how easy it is to incorporate into other things.
  7. What is your go-to drink when you are out and about?  Craig hands down loves to drink anything with Fernet Branca or Fernet and Coke.  He orders it everywhere we go.  Rhonda’s go-to drinks are usually a Templeton Rye and Ginger Beer (Maryann or Ginger) or a Correlajeo Skinny Agave Margarita.  It’s just easy to order and most bars are able to make it.
  8. Where is your favorite place to go out and have a drink?  Craig’s favorite place is Sable Kitchen and Bar in downtown Chicago at the Kimpton Hotel.  Rhonda’s favorite place is Village Burger Bar.  They have really good Corralejo Margaritas and I love their sweet potato fries.  Really she just loves anywhere with a great patio and fire pit.
  9. What have been your favorite posts?  Choosing a favorite post is a lot like choosing your favorite child. It’s difficult to pick just one. (Don’t tell, but Blind Piglet #3 is our fav.  Shhhh!) We do have a few favorites, though.  Some of the posts that are special to us are because of things that were going on in the background when we were prepping or taking photos.

Rhonda’s Favs:

  • Corralejo Skinny Agave Margarita:  This was our first official post and some of Rhonda’s girlfriends came over to help us kick off the post.
  • The Watermelon Wars:  Both of these drinks are delicious and it truly was a war between us to decide which recipe was better.
  • Mary Ann or Ginger:  To this day, this is still my go-to drink when out and about.
  • Golden Mint Crinkles:  This cookie recipe was a family favorite to begin with, and we were able to make it even better.
  • Salted Whiskey Caramel Corn:  We had a lot of activity in the house the weekend we made this post.  This post always makes me think of warmth, family, and home.  Not to mention all of the caramel corn was gone within two hours of the photo shoot.
  • Tequila Ceviche: We used this recipe all summer long.  It was so easy, tasty and fresh.
  • There are more, but we don’t want to bore you.
