No Fuss Treats for a Super Super Bowl Party

Have you heard that we are kind of excited about the super bowl at The Blind Pig house?  Believe it or not, we are not going to have a huge party, because we want to be able to focus on the game (and commercials). We are only having a few peeps over.  Whether you are having a huge party or watching the game with just a small group, we thought we would highlight a few of our recipes that can be game day ready in a flash!

We are breaking this post into three categories: beverages, sweet stuff, and munchies.  To find what you are looking for you can scroll to the category you want or take your time and explore all of it.

Large Batch Drinks: For the big game you may not want to spend your whole time in the kitchen mixing drinks.  We get it!  That is when it is convenient to have a large batch ready to go.  A sangria is always a winning large batch recipe.  You can fix a day or hours ahead of your party. Our favorites are  Bianco Sangria and Carpano Antica Sangria.  If you have a punch bowl, you cannot go wrong with a delicious punch. Although Jingle Gin Punch was intended for the Christmas season, it is a winning cocktail year round.  You can always re-name it Victory Punch for the party.  Seagram’s Peach Punch is also easy and a crowd pleaser at the same time.  All you need is some Seagram’s vodka, sliced peaches, and lemonade.  Can’t find peaches in the grocery store this time of year?  Add any fresh fruit to give your punch a winning appearance.

Mix it Up:  If mixed cocktails are what your crowd is into and you don’t mind spending some time away from the game, here are some cocktails that will help you score points with your friends.

We introduced you to Arrowhead Punch in last week’s post.  This red beverage is what our friends are going to be served during the game.  Another great red beverage is The Love Triangle.  We originally created the Love Triangle for our first Valentine’s Day, but it is a winner anytime of year.

A good play that always works is a great Skinny Margarita!  Other margs that can be sipped on at kickoff are: Merry Margarita and Strawberry Basil Margarita.

Fernet and Coke is the drink of choice for Argentinians when they watch a big football (soccer) game.  Maybe it’s time that Americans are introduced to this great beverage while watching their favorite sport?

Sweet Stuff:  This is Rhonda’s favorite category.  Not only are these treats easy to make, but they are sooo delicious.  If you walk in to a Super Bowl party with one of these in your hand, you will gain a lot of fans.  The first one that moves our chains is Borghetti Brownie Caramel Delights, all you need is a brownie mix, some Rolos and some Caffe’ Borghetti Espresso Liqueur.  Dip these in chocolate and you are good to go!

Rhonda took our Easy Espresso Cake to work this week for a super bowl pig out.  Rename it Chiefs Kingdom Cake.  Decorate with some Chiefs flags and your crowd will be dancing like Travis Kelce. Two other easy treats are Salted Whiskey Caramel Corn and Twisted Missouri Mud Brownies.    You can not go wrong with some fondue at your party.  Make Caramel or Chocolate fondue with some sliced fresh fruit and cubes of sponge cake.  Field Goal!!

Munchies: If you want to serve some substantial munchies at your party, Cola and Whiskey Brisket is a good place to start. Serve with some Corralejo Lime Guac and Tequila Ceviche.  Yummo!

We hope you have a wonderful Super Bowl party.  May the Chiefs win and the commercials be entertaining. Let us know if you served one of our recipes at your party.  We would love to hear about it.

Cinco de Mayo Recipes for Your Party

Cinco de Mayo is right around the corner, and although many Americans think that it is Mexico’s version of our Fourth of July, it is a holiday that celebrates the date of the Mexican army’s 1862 victory over France at the Battle of Puebla during the Franco-Mexican War. Cinco de Mayo is a relatively minor holiday in Mexico. In the United States, Cinco de Mayo has evolved into a commemoration of Mexican culture and heritage.  Americans don’t need much of an excuse to have a party.

When planning this post we were going to introduce you to another great margarita recipe, because everyone loves a good marg, right?  Then we started to scroll through our past posts and realized that we could put together a whole menu of easy, tasty and fresh ideas for your Cinco de Mayo party.

Appetizer– Tequila Ceviche.

We shared this post with you last summer, and it became a huge hit in TBP household.  This is often a go-to for us when friends and family are joining us for dinner.  Hosting tip– this is delicious if made ahead of time.  It gives the flavors time to meld together and you time to take care of other pressing matters.

Cocktails!  You can’t have a Cinco de Mayo party without a yummy margarita.  We have some marg suggestions for you.

Skinny Agave Margarita:  This one is a crowd pleaser.  Easy to make and easy to drink.

Jalapeno Popper Margarita:  Need to spice things up a bit?

Watermelon Jalapeno Margarita: Fresh and spicy.  What else is there to say?

Merry Margarita:  We know it’s not Christmas, but this drink will keep your guests merry all year long

Santorita:  This marg is made with mezquila.  You can also substitute your favorite tequila.  It’s an excellent recipe.

In keeping with other yummy Mexican beverages we have some margarita alternatives.

Rojo:  This drink is made for the more sophisticated palate.  With a name like Rojo, how can it be left off the list?

Carpano Antica Sangria:  Need a large batch recipe?  This is your friend.  For the busy host, this recipe also can be made ahead of time.

Paloma:  Palomas are more popular in Mexico than margaritas which are more of an American invention.  If you really want to be true to Viva La Mexico, go with the Paloma.

The Paloma is a refreshing alternative tequila cocktail to the typical margarita.

Main Course: We have 3 wonderful choices for you for the main course.

Hatch Tequila Chicken:  This recipe is a little more time consuming, but if you plan ahead you can prep much of this a day ahead in order to make the day of your celebration a breeze.  This chicken is so yummy.  It is well worth the extra effort.

Corralejo Honey Lime Chicken:  This is a great choice, especially if you are in the mood to grill.  This chicken is very versatile.  It can stand alone, be sliced up and served in tacos or fajitas.  This is a TBP family favorite.

Tequila Fish Tacos:  These tacos are very yummy and flavorful.  Fish tacos aren’t for everyone, but we highly recommend this recipe.

Dessert: Tequila Strawberry Lime Ice Cream Pie

This pie recipe will need to be prepped the day before your party.  With its yummy strawberry ice cream, pretzel crust and touch of tequila flavor, your guests will be blown away!

Choose one or choose them all, you can’t go wrong with this line up for your Cinco de Mayo.

Bonus Post: Corralejo Lime Guac

corralejo lime guac

It’s time for our May bonus post.  This month’s bonus is an easy, tasty, fresh recipe that you can whip up with a Mexican meal or if friends are dropping by for a last minute visit.

With the fresh ingredients of avocados, cilantro, tomatoes, onions, jalapenos, lime and a splash of Corralejo Anejo Tequila, your guests will be singing your praises.  We had family visitors from California last weekend, and wanted to serve a tasty meal with little fuss.  The guac was a hit and so easy to make.  It was a great compliment to chicken enchiladas and a Santorita!

First slice avocados into a molcajete or other bowl. Smash avocados with a fork.  Next add diced tomato, diced cilantro, diced onions, and jalapenos.  Mix together with the avocados.  Blend in the juice of 1 lime and .5 ounces of tequila.  We used Corralejo Anejo Tequila.  Anjeos are aged 1-3 years, so they have more flavor that comes through in the guac than a regular blanco tequila which is not aged and bottled immediately.   Add a pinch of kosher salt.  Serve with blue corn tortilla chips.  Yummo!
