Oh Nuts!!!

If you’ve been around our blog for very long, you know that we are little crazy.  This week we are going nuts!  It is kind of a metaphor for The Blind Pig household, but we are literally going nuts this week and next by sharing some very easy, tasty and fresh recipes with you to use during your fall entertaining.

This week’s recipe, Whiskey Spiced Pecans, is so easy and delicious.  You can easily add this to a last minute entertaining menu.  You will look like a rock star host or hostess, and you barely lifted a finger.

To make Whiskey Spiced Pecans you will need your favorite rye whiskey or bourbon,  whole pecans, apple juice, sugar, cinnamon, allspice, salt and ground red pepper.  First soak the pecans in a mixture of apple juice and whiskey for 30 minutes to an hour.

Stir together all other ingredients and set aside.

Drain the pecans, we removed our pecans from the juice/whiskey mixture with a slotted spoon. Place the pecans in the sugar mixture and coat well.

Side note about the sugar mixture:  there are several variations that you can take here according to your personal preference. After making the recipe with just a little bit of red pepper, we would probably ramp up the pepper a bit to make the nuts a little more spicy.  You could also substitute pumpkin pie spice for the cinnamon and allspice.

After coating the nuts in the sugar mixture spread out on a cookie sheet covered with foil and sprayed with cooking spray.  Place in a 350 degree oven for 15 minutes.  Make sure to stir half-way through the cooking process.  Remove from the oven and cool for 20 minutes.
