Strawberry Mint Spritz

Craig is out of town this week at the Aspen Food and Wine Festival, so I am taking up the slack and posting on The Blind Pig Blog while he is having a great time in a beautiful Colorado town.

Since it is 9/11 I am feeling a little patriotic and reflecting on how 20 years can slip by so quickly.  We all have our own connections and memories from that horrible day.  Tattooed on my brain is the residual eeriness of no airplanes in the sky for several days.  I also remember how proud I was to be an American.  Individuals from all walks of life were uniting, flying flags, and saying, “God Bless America!” was heartfelt instead of a saying imprinted on the front of a cheap plaque made in China. Twenty years fly by, but sadly I wish Americans could return to some of the sentiments from two decades ago.

Now that summer is closing out, we have a few more light cocktails to share with you and this one is a perfect light sipper.  Strawberry Mint Spritz is made with vodka, prosecco, lime sparkling water, a little simple syrup, fresh berries and mint.

First place strawberries in the bottom of your cocktail glass, add a few mint leaves and drizzle in the simple syrup.  Muddle these ingredients in the bottom of the glass.  Add vodka, prosecco and top off with lime sparkling water.  It’s delicious, light and perfect for sipping on a late summer or early fall evening.

This simple cocktail would taste great with any fresh berries or fruit added.  Peaches, blueberries, blackberries, watermelon, cucumbers, cantaloupe,  or oranges could be substituted for the strawberries.  The possibilities are endless!

A Better Aperol Spritz

aperol spritzHello Friends!  How was your week?  We have been busy around The Blind Pig Headquarters searching and trying out a lot of new recipes to share with you!  However, before we move on to something new, we wanted to share a classic cocktail with you that we feel we have actually made a little bit better.

Remember a couple of months ago when we went to California for a much needed anniversary trip?  We stayed at our friend Mike’s house and he offered to make us an Aperol Spritz.  Normally, Rhonda perks up at anything with the name of spritz because she knows it contains prosecco or something else bubbly and delicious.  However, Rhonda has tried Aperol Spritz’s in the past.  They were all the rage when she visited Blind Piglet #1 in London last spring.  This classic cocktail has been a little bit heavy on the Aperol side, which takes some acquired taste.  However, Mike’s Aperol Spritz was very drinkable and delicious.  So Mike shared his secret sauce with us!

To make an Aperol Spritz you need: Aperol, chilled prosecco, and olives in saltwater.  What is Aperol?  Aperol is an apertif made in Italy.  It has a bitterness to it — thus why Rhonda did not like the flavor. The olives we used were purchased at Whole Foods.  You want to make sure to splurge and buy some higher end olives to round out the bitterness of the Aperol.  And while you’re at it — toss in more than one.

Place a large cube of ice in your glass.  It is very trendy to now serve an Aperol Spritz in a large cabernet wine glass.  Since it is a classic cocktail it also has a distinct appeal in a rocks glass — especially when you use a large block of ice.  Next pour in a ounce and half of Aperol over the ice.  Pour 2 ounces of chilled prosecco over the Aperol.  Finish with an olive or two.  Sip and Savor.  If the Aperol is too strong for your taste, just add a little more prosecco to your glass.

Mother’s Day Brunch: Grapefruit Spritz

mother's day brunch3Hi friends!  It seems like we were just with you since we wrote the April Bonus post just a few short days ago.  What did you think about the Templeton Whiskey Cake?

Mother’s Day is just a couple of weeks away which got us thinking about the perfect Mother’s Day Brunch.  Mimosas came to mind.  Don’t get us wrong, Rhonda loves a good mimosa, but they seem a little ordinary.  We are excited to share a new beverage recipe with you this week. Rhonda is kind of on a spritz kick right now. She had a delicious spritz in England when she went to visit Blind Piglet #1.  Then she came home and made The Cucumber Gin Spritz.  We had some of Seagram’s new Grapefruit Vodka in the house.  We were playing around with different recipes we could try with this citrusy liquor, and the Grapefruit Spritz was born.

Now that you know the backstory, let’s get to the details.  We hear you already.  Not a grapefruit fan?  Is it the crazy cousin in the beloved citrus family?  No worries.  We aren’t huge grapefruit people either.  However, Seagram’s Grapefruit Vodka has just enough citrus taste to give this drink a light citrus flavor without overpowering the drink.  We pinky promise.

This beverage hits the mark for easy, tasty and fresh.  The recipe is soooo easy that you will feel guilty when your mother brags on what a great job you did serving her Mother’s Day brunch. Of course the drink is tasty, we already told you that.  Fresh?  The citrus punch of the grapefruit coupled with an easy garnish of fresh grapefruit has fresh written all over it!
