Best Dressed Drinks

Just like the right accessories for your favorite outfit, the trend in cocktails is the more embellished, the better.  Any trained chef will tell you that the presentation is almost as important as the taste.  We have wanted to write this post for more than a year, but always seemed to have a more urgent recipe or idea that we wanted to share with you.  Once we started exploring the idea of cocktail garnishing we realized that this topic goes much deeper than a cute umbrella in your pina colada!  This post is going to focus on some common and easy ways to garnish a cocktail.

In our  Orange  Basil Spritzer, we glazed some blood red oranges with some sugar and a creme brulee torch. Then we added a whole basil leaf as a float.

First you want to make sure that the aroma and the flavor of your garnish pairs well with your drink. You don’t want to stick a cube of cheese with tequila based cocktail or pair watermelon with a bloody Mary.  Or maybe you do?

In our Orange Anejo Sour we use the froth from the egg white to help our slice of orange float.

There are a variety of items that you have around your kitchen that can easily be used or purchased to give your cocktails a little extra flair.  Here are some of our favorite choices for garnish.

Use Fresh Fruit. The easy choices are fresh fruits.  Place a slice of citrus, such as, a lime wheel or a slice a pineapple on the edge of the glass.  It is simple, but still adds a pleasing visual to your cocktails that entices the senses.

The layering effect of the wine, square ice cube and a dehydrated lime wheel give an interesting visual for our fall cocktail the Rojo.

Use citrus peels. Using the peel of citrus is a very popular way to garnish cocktails.  Use a peeler to peel off a piece of the peel.  You can simply plop the peel into the cocktail or you can ribbon it through with a cocktail skewer for a fancier look.  Fine ribbons of peel are popular to use.  You can spiral them around the glass or twist them around a skewer into a cute little spiral.  We have even seen bartenders take citrus peels and fold them like origami into cute sculptures to place on the edge of a glass.

In the Spiced Manhattan we ribboned a lemon peel through a skewer and added some Luxardo cherries.

Use berries. While we are on the topic of fruit, don’t forget about fresh or frozen berries.  Berries can easily be placed on a skewer, toothpick or just plopped in the glass or pitcher as a float.  Berries are one of the easiest ways to add color and some added appeal to a cocktail.

Use fresh herbs. Sprigs of fresh herbs also make a great garnish.  Not only is this an easy garnish to use– all you have to do is snip it and place it in the drink.  We love to use fresh herbs in the summer.  We just go out to our garden snip a few herbs and head back inside — instant garnish.  Herbs that we often use for garnish are: thyme, basil, rosemary, and mint.

Use vegetables. Vegetables are often forgotten as a garnish for cocktails, but can make a very effective display.  One of our go-to vegetables to use is cucumber.  We like add slices or long strips of cucumber to summer drinks.  Other great vegetables to use for garnish are carrot strips, pickles, asparagus, celery, tomatoes (yes, its a fruit…), and little baby corns.

Double Thyme is garnished with fresh thyme and a sliver of cucumber.

Bacon, peppers, celery, and shrimp anything goes in this Bloody Mary.

Don’t forget the ice!  The kind of ice you choose and what you put into the ice can also be used to impress your guests with a very visual cocktail.  We share some of our ideas about ice with you years ago in our Ice, Ice Baby post.

Use fun trinkets. You can use non-edibles in your cocktail, like colorful straws, cute stirrers, cocktail umbrellas or other funny little trinkets.

Make sure to layer. The real artwork in garnishing comes from layering several of these ideas together into a spectacular visual display.  Depending on the look you are going for, the crazier the better.

It’s all in the details. Whether you are serving a glass of sparkling water or a bloody Mary to your guests, take time to prep for a special garnish.  It makes any beverage look best dressed and makes your guests feel a little more pampered.  What is your signature garnish?  We would love to hear your ideas.  Look for future posts on garnishes.  We still have more ideas to share with you.

Santorita!

santoritaIt’s unofficially summer in Texas.  This week in Dallas the temps hit 96 degrees and felt warmer than that with the heat index. When nature is calling for summer, why fight it?  Join in the spirit with a Santorita.

This delicious drink is a small twist on the typical margarita by using a spirit which is gaining popularity.   Mezquila is a blend of mezcal and tequila. Mezcal is derived from various types of agave plants and  usually has a distinctive smoky character. Tequila is made only from blue agave and comes from specific parts of Mexico.  When blended together you get mezquila.

Who better to bring you this tasty spirit than Sammy Hagar and Adam Levine?  The two have teamed up to make Santo. Santo is a blend of mezcal and tequila with a touch of smokiness and a soft agave finish.  This smoky flavor makes for an interesting flavor in your margarita.

You all know that Craig has a job where he occasionally gets to meet some super cool people.  These photos are from a Santo kick off party from about a year ago.  When asked if he got pictures with Sammy or Adam, his reply was, “I was standing in the back talking to Adam’s parents.”  Sigh!

 

To make this smoky little number, you need Santo, Cointreau, cocktail ready agave nectar, a whole lime and a half of an orange.  The addition of a little squeezed orange juice to this recipe enhances the smoky flavor of the Santo to give your margarita a richer, smoother taste.  This drink is a great compliment to your next Tex-Mex or Mexican meal.

Bar Tools and Supplies We Love

Have you started a new hobby and you weren’t quite sure which tools and supplies you really needed?  You go to the store all pumped up about your new endeavor, but you are not quite sure what to things are a necessity and which things are just fluff?  This post is for you.  Maybe you want to stock your new bar or you are already thinking ahead to Father’s Day gifts? We are going to share with you our top tools and supplies that we can’t entertain without.

8.  Wine Corker

Although we don’t focus on wine on The Blind Pig Blog, we do drink wine occasionally and especially serve wine when we entertain.  It is worth it to invest in a good sturdy wine corker.  We like this one because it feels sturdy in our hands and is good quality.  You don’t want a corker that will break off cork into a guests wine!  We also like this one because it is easy to store and does not take up a lot of space in our bar area.

7. Strainer

We don’t use a strainer often, there are definite recipes that require a strainer.  It is handy to have one around for recipes like The Cucumber Gin Spritz.

6.  Muddler

How can you make a Zaya Rum Mojito without a good muddler? This tool may not be used everytime we serve drinks, but it is nice to have one on hand for those special cocktails.  We bought a wooden one similar to this one at Target.

5.  A Variety of Glassware

“Glassware is to a drink as shoes are to a woman’s outfit,” says Rhonda. “A woman can have the cutest outfit, but wear the wrong shoes with it and it just doesn’t work.”  It’s true with cocktails and glassware.  Drinking a spritz? You need a tall skinny glass.  Drinking a hurricane?  You need a big hefty schooner.  Margaritas taste best in a margarita glass.  You get the point?  Your drinks look and taste much better when paired with the correct glassware.

4.  Jigger

Our jigger is one of our most used bar tools.  We use it to measure ounces for all of our favorite recipes and couldn’t do without it.

3.  Fun straws and napkins

Okay, Rhonda slipped this one in.  It’s kind of like her shoe analogy above.  Rhonda thinks everything tastes better with a straw, and to save the environment it tastes better with a cute paper straw.  Colorful napkins with funny sayings make entertaining more fun, too.  Rhonda usually picks these up when she finds them at Home Goods or in the dollar section at Target.  We keep them on hand in our pantry for last minute get-togethers.

2. Lemon/Lime Squeezer

We use our lemon/lime squeezer constantly.  Almost every cocktail we make needs a squeeze of this or a squeeze of that.  In order to make the freshest cocktails we can, we have to have a squeezer. We bought this one years ago from Pampered Chef.  This one has been well worn, but we love this sturdy and durable tool. Skinny Agave Margaritas would not be the same without the squeezer.

1. Cocktail Shaker

Where would we be without the shaker?  This tool is our most used and favorite bar tool.  Rhonda bought Craig a larger shaker a few years ago for Christmas, but we still gravitate to this one.  It is just the right size to shake a cocktail or two.  It fits nicely in our hands and in the dishwasher.

A Spritz of Spring

Hello friends!  We are enjoying Spring in full bloom.  Our flowers are blooming, the lawn is turning green, and our trees have bright  leaves and buds.  We know that some of our readers in the Midwest are longing for Spring, but they are still dealing with Winter.  This week’s light and fresh beverage will have you feeling like it’s Spring in no time.

You may notice that we are introducing a new spirit into our Blind Pig repertoire.  Our newest member is Malfy Gin.  This yummy spirit comes to us via the Amalfi Coast in Italy.  Malfy Gin is one of the only true Italian gins. Although most people think gin originated in England, its true beginnings were in Italy.  The Amalfi Coast is one our favorite spots to visit in the whole world.  We stayed in the village of Sorrento in an refurbished castle.  We had the most amazing pizza in Sorrento in a little outdoor cafe.  Our photos were from the pre-digitized photo generation, so we found this photo to help get you in the mood.

The Cucumber Gin Spritz is a light, refreshing drink made with Malfy gin, prosecco and club soda.  The added crisp freshness of muddled cucumber and a cucumber ribbon around the circumference of the glass gives the drink a cooling and energizing zip.

 

Although the Cucumber Gin Spritz takes a little more effort than many of our other recipes, there is no need to worry. It’s not too difficult.

To start, cut 5 round slices from the cucumber to muddle in your shaker.  Shave a long thin ribbon of the cucumber to save as a garnish for later.

If you don’t have any simple syrup on hand, you will want to make some of your own.  We gave you some recipes for simple syrup in our Mojito post.

After muddling the cucumber, add 1 ounce of gin, 1/2 simple syrup and ice to the shaker.  Shake.  Strain the mixture into a serving glass. We used our bar strainer, but you may want to use a strainer with a thinner mesh.

Top off with about 4 ounces of Prosecco and add a splash of club soda. Ahhhhhh!  So tasty!  So easy! So fresh!

Mint to be Irish

Hello friends! We are starting spring break this weekend, and we are looking ahead to St. Patrick’s Day.  We both come from Irish ancestors. Craig’s grandmother’s maiden name was Gertrude Holmes. Rhonda’s grandmother was Mary Dorothea O’Donnell, and Mary Dorothea’s father was Patrick O’Donnell.  Can you really get any more Irish than that?   Whether you are Irish or just want to be, we have a fun little cocktail for you to toast your lads and lassies.  You will believe that you were Mint to Be Irish.

Just like the lucky three leaf clover, this cocktail is made with three delicious spirits — Kerrygold Irish Cream, Zaya Rum, and Branca Menta.

Add 2 ounces of Kerrygold Irish Cream, 1 ounce of Zaya Rum, and 1/2 ounce of Branca Menta to a shaker.  Top with a scoop of ice and shake for 20-30 seconds.  Pour into a small cordial glass and garnish with a mint leaf.

Yummo!  This tasty sipper will have you kissing the Blarney Stone and dancing an Irish jig.

Classic Boulevardier

Hey friends.  For those of you who are new to our blog, welcome.  We are glad you stopped by.  To our loyal followers, we hope you have some Beer Brisket cooking in your crockpot for the big game on Sunday night.  This week we are going back to classic cocktails to give you two great ways to make a Boulevardier.

The word boulevardier, according to Webster’s Dictionary, refers to men who were worldly and socially active.  The first boulevardiers got their name from the thoroughfares they frequented: the boulevards of Paris.  Unlike many nicknames, “boulevardier” is generally a complimentary term. It is quite fitting that this term refers to men, because the boulevardier drink is usually a drink that appeals to men over women.  Craig loves Boulevardiers — Rhonda not so much.  They are very alcohol forward, but a great crowd pleaser for those who want a classic cocktail vibe.

Here’s how we make ours.  We made a large batch for a party that we hosted.  We started it two weeks prior to the party, so the flavors had plenty of time to blend and mature prior to serving.

Templeton Rye, Carpano Antica Formula, and Campari are needed to make a Classic Boulevardier.

We used our infusion barrel.  Prior to using a barrel like this, make sure to fill it and soak it in water for a few hours.  You want the wood to expand and seal against itself.  Otherwise, you will have your drink leaking everywhere, and you don’t want that!

We filled the barrel with 1 liter of Templeton Rye Whiskey.  Rye whiskey is a key ingredient in a Classic Boulevardier.  You don’t want any whiskey other than rye.  Next add 1 liter of Carpano Antica Formula.  We shared Carpano Antica with you back when we made our Sangria. Next add 750 milliliters of Campari, and finally add in about a teaspoon of Angostura bitters.

Most barrels do not have large openings, so make sure you have a funnel handy for pouring the liquor.  You can also use the funnel pour spouts like we have in the photos.  After two weeks, pour in a rocks glass and serve with a single large cube of ice. Sip slowly and enjoy.

  • 1 ounce Carpano Antica Formula
  • 1 ounce Templeton Rye Whiskey
  • 3/4  ounce of Campari
  • dash of Angostura Bitters

Stir and pour into a rocks glass.  Serve.

Double Menta

Have the girl scouts been out and about in your neighborhood?  They are in full force around the Dallas area selling their boxes of irresistible confections.  Thin mints are one of our favs, but this year we are making our own grown up thin mints. We shared one of our favorite mint liqueurs with you in other posts like,  3 Hot Chocolates With a Twist and Who Needs Half-Price Shakes After 8?Who Needs Half-Price Shakes After 8? Branca Menta is the perfect amount of mint to give these chocolate cookies a little zip. Not a cookie person?  No worries!  We have a thin mint in a glass for you, as well.

branca mentaWe found the cookie recipe last March on Liquor.com with a few minor adjustments we made it our own.  Start by whisking together the dry ingredients in a mixing bowl.

Then beat the sugar and butter until creamy with a mixer.  Slowly add the eggs and the extracts.  Next add the flour mixture slowly to the mixer until combined. The dough is super sticky.  (We will talk about that more in a moment.)

Chill the dough for at least 30 minutes.  Do not skip this step or it will become very difficult to work with later.

Preheat the oven to 350° F.  You will need to roll the dough into little 1 1/2″ balls.  To make this easier, wash your hands carefully.  Then spray your hands with cooking spray.  (You will be glad you did!) Scoop a spoonful of dough out of the bowl and into your hands. Roll the dough until a nice ball forms.  Since you chilled the dough and sprayed your hands with cooking spray, the balls form nicely and do not stick to your hands!

After rolling the dough, flatten the balls with the bottom of a glass.  Remember how you sprayed your hands with cooking spray?  Spray the bottom of the glass before flattening the cookies.  It keeps the cookies from sticking to the bottom of the glass.  The recipe calls for making the discs about 1/4″ thick.  We couldn’t get ours quite that thin.

Bake the cookies, and flip them to the other side to bake after about 4 minutes.  Bake for a total of 8 minutes.  Let the cookies cool slightly on the tray and then transfer to a cooling rack.

Meanwhile, you can melt the chocolate chips.  Instead of using a double boiler, we usually melt our chips in the microwave.  We set the cook time for no more than 30 seconds each interval.  After 30 seconds is up, we remove the bowl, stir, and return to the microwave for 15-30 more seconds until the chips are melted and smooth.

Dip the cooled cookies into the chocolate one at a time to coat.  Shake off excess chocolate and place on parchment paper to set.

Now you are ready for some delicious homemade Thin Mentas!  While these cookies do not taste exactly like the cookies the Girl Scouts sell,  they are still a delicious treat.

Thin Mentas

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 3/4 cup granulated sugar
  • 5 tbsp butter, softened
  • 1 large egg plus 1 large egg yolk brought to room temperature
  • 3 tablespoons of Branca Menta
  • 1/2 tsp peppermint extract
  • 12-18 ounces of semi-sweet or dark chocolate chips

In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda and salt.

In a larger bowl on a mixer stand beat together the sugar and butter on medium speed until creamy.  Reduce the speed and add first the egg and then the egg yolk, beating well after each addition. Beat in the extracts.  Slowly beat in the flour mixture until just combined.  The dough will be super sticky.

Shape the dough into a ball and chill for 30 minutes.  After chilling the dough, shape the dough into 1 1/2″ balls and place on cookie sheets.  Flatten with the bottom of a glass till about 1/4 inch thick.  Bake the cookies for about 4 minutes, remove flip and bake for another 4 minutes until dry and crisp and firm around the edges.  Let the cookies cool slightly on the cookie sheet and then transfer to wire racks to cool completely.

Melt chocolate chips in the microwave at 15 second intervals stirring until smooth.  Dip cookies into the melted chocolate and turn to coat .  Shake off any excess chocolate and place on parchment paper to cool.

Add one part Branca Menta and one part Seagram’s Cookies and Cream Vodka in a rocks glass.  Place in the freezer for 15 minutes.  Then sit back and drink your girl scout cookies.

Tastes like Fall!

We shared with you weeks ago that we love Fall!  Here in Texas we are starting to wake to cool crisp temperatures and by the afternoon the weather is just right for sitting on our back deck or next to a fire in the chimenea with a smooth fall drink in hand.  The beverage we are sharing with you today tastes like fall.  That is the best way to describe it!  It is a sangria with hints of cinnamon and a smooth warm finish from Zaya Rum.  We loved our summer sangria recipe we shared with you, so we are excited to share a twist on a sangria recipe that is Fall in a wine glass.  What could be better?

True to our motto, the ingredients are easy, tasty and fresh.  The fresh fruit of apples and pears with a hint of citrus orange compliments the rum and cinnamon nicely.  We used Diet Sprite in our sangria to cut down on calories and reduce the sweetness.  This recipe tends to be very sweet, so you may want to choose a white wine that is not too sweet for your sangria, such as a Chardonnay.

Zaya Fall Sangria

  • 1 apple
  • 1 pear
  • 1 orange
  • cinnamon sticks
  • 1 bottle of white wine
  • 1/2 cup of  Zaya rum
  • 4 cups of lemon lime soda 

Slice fruit or cut into chunks.  Place in tall pitcher with 3-4 cinnamon sticks.  Pour bottle of wine in pitcher.  Add 1/2 cup of rum. Stir.  Place in refrigerator to chill for 4-5 hours.  Prior to serving, add 4 cups of lemon lime soda.  Stir, serve and enjoy.
