Yum Rum Balls

Cheers, Friends!  You know how we told you that if you get one of our holiday goody bags from us that you were going to get some Golden Mint Crinkles?  Well… we kind of ate all of them.  Rhonda made an effort.  She quickly scooped up extras and put them in the freezer for safe keeping.  Unfortunately, the Blind Piglets, and both of us kept sneaking one here and two there, so now there are none left.  We told you that was a winning recipe!  No worries.  We will make more and try to get them in the goody bags before we inhale all of them again.

Today we are sharing another great holiday goody bag treat.  Yum Rum Balls! (stop snickering)  We’ve made rum balls before, but this recipe seems to have more flavor and flair than other rum ball recipes we’ve tried.  We hope that you like it as much as we do.  This recipe requires some prep on collecting the ingredients, but is easy to pull together once you are ready to get started.

There are a couple tricky ingredients.  The first tricky ingredient is Nabisco Wafer Cookies.  We first introduced these to you with the Spirited Chocolate Orange Bars.  You don’t find these on the cookie aisle. They are usually placed with the ice cream toppings.  The second tricky ingredient is almond paste.  We had not used almond paste before, but the cashier at Whole Foods told us that it was baking’s best kept secret.  So apparently the secret is now out!  Use almond paste for cookies and pie crusts.  You can find it on the baking aisle. We bought ours from Whole Foods.  When we googled it, we noticed that other grocery stores carry it.

Other ingredients that you need for Yum Rum Balls are: dark chocolate chips, sour cream, vanilla wafer cookies, powdered sugar, cocoa, Zaya Rum, melted butter and lots of sprinkles!

Place chocolate chips in a microwavable bowl, and cook in short bursts of no more than 45 seconds at a time.  In between cooking stir until chips are melted with a creamy consistency.  It is better to be patient and take this step slow instead of overcooking the chips.

Place the whole box of vanilla wafers in a food processor or blender and blend until you have fine crumbs.  Do the same for the box of chocolate wafer cookies.

In a mixer combine the melted chocolate with sour cream and almond paste.  Mix on medium until well combined.

In a large bowl combine both cookie crumbs, powdered sugar, cocoa, rum and melted butter.  Stir with a large spoon until well combined.

Next add the crumb mixture to the chocolate chip mixture in the mixer.  Mix on medium until all ingredients are well blended.  The mixture will have a paste-like texture.

Refrigerate the dough for a minimum of an hour and up to 24 hours.

Place sprinkles in a bowl.  Using a small scoop, scoop balls of mixture.  Remember our trick from our Thin Mentas and Golden Mint Crinkles?  Spray your hands with cooking spray to make the handling of the dough easy.  Roll dough in your hands to smooth out edges.

Drop balls into the sprinkles.  Roll in sprinkles to cover completely.  Use hands to press sprinkles into dough and to make sure balls are coated.  Refrigerate until ready to serve.  Makes approximately 4 dozen.

If you want to get creative, you can coat the Yum Rum Balls in different colored sprinkles, chocolate sprinkles, Heath Bar Crumbs, nuts and more!

Yum Rum Balls are a fun and festive way to kick off the holiday season.

Happy Fall Friends!  Just when we think it is never going to return, we feel that crisp breeze and the scent of Fall is in the air.  In Texas, Fall is a very welcome old friend and a great time to sit on the patio with friends and loved ones sipping on a delightful cocktail.  This week we are sharing a cocktail with you that complements the season well. The Rojo has a full bodied flavor that is perfect for sipping on a cool autumn night around a fire.

To make the Rojo, you will need Zaya Rum or another high quality dark rum, fresh lime juice, brown sugar syrup, and medium bodied red wine. To make the brown sugar syrup, follow the same directions for making simple syrup.  This time you will use a 1:1 ratio of brown sugar and water.

The Rojo gives us an opportunity to share some new elements with you that are popular on the cocktail scene.  The first new element is the trend to garnish drinks with dehydrated citrus fruits.  We adapted the recipe a bit, and noticed that it was garnished with a dehydrated lime.  So we partook in a little experiment to see how to go about creating this effect.  Apparently, dehydration has become popular in many bars and restaurants to prevent wasting so many citrus fruits at the end of a shift.

To dehydrate limes we thinly sliced a lime.  Then we placed the limes on parchment paper on a baking sheet.  We set our oven as low as it would go, which was 200 degrees.  If you can set your oven lower, we would suggest trying it.  Place the baking sheet in the oven and let the limes slowly bake.  This process will take almost all day long.  We checked on our limes every hour- two to make sure that they were not burning.  After about 4 hours, we took our limes out of the oven and flipped them over.  As you can see, our limes dehydrated and caramelized a bit. However, if you are lucky enough to have a dehydrator, your limes will only dry and not change color.  We still think that our dehydrated lime gives our drink and interesting garnish, and the limes are now sitting in our pantry ready to be used for other drinks or plopped in a glass of ice water for a lime flavor.

Another fun element that brings a little extra sizzle to your cocktails is adding a red-wine floater.  To create this effect in your cocktail you make the cocktail as directed and pour into your glass.  Then very gently drizzle wine over the back of a spoon to disperse the wine atop the cocktail.  This creates a thin layer of wine at the top of the drink, and makes for a visually pleasing cocktail.  If you need to see how to make a float in action, we found this helpful video on YouTube.

The last element that makes this drink special is ice.  We have shared with you before the importance of matching the right ice to the right cocktail.  You want to use a large cube with the Rojo.  If you don’t, the floater will not have as big of an effect and the drink will have less visual appeal.

Happy Memorial Day weekend, friends!  We hope that you are out soaking up the sun or spending the weekend with friends and family.  Most importantly, don’t forget why you have this three-day weekend that kicks off the summer in the first place.  It is to remember those who have fallen in service to our country.

Nothing says summer like the taste of homemade ice cream.  Ever since we brought you Kerrygold Ice Cream last summer, we have been wanting to try out some other variations of this easy, tasty treat.

We are not going to take you through all of the steps of making the ice cream with photographs, because to tell you the truth, they would look almost exactly the same as our first ice cream post. But we will tell you that instead of adding Kerrygold Irish Cream to the mixture, this time we added 1 ounce of Zaya Rum and 1 ounce of Branca Menta.  The addition of rum and mint flavors to the ice cream gave it the familiar taste of a cool, refreshing mojito.  Serve it in a small serving dish with a fresh sprig of mint on the side.

So easy! So fresh! Just the right refreshing dessert for summer.

Tickle Me Pink

Happy Mother’s Day a few days early to all of our favorite moms.  We are raising our glass to moms everywhere with this week’s drink — Tickle Me Pink.  This rose’ sangria will be a fan favorite when you serve it from your favorite patio to celebrate the moms in your life.  It fits The Blind Pig criteria because it is easy, tasty and fresh!

To make this rose’ sangria, you will need a pint of fresh strawberries, 4 fresh limes, 1 bottle of Rose’ wine, 1/2 cup of Zaya Rum, and 4 cups of Diet Sprite.  Most sangria’s call for a white rum, but we like to use a dark rum like Zaya because it has a richer flavor that compliments the fruit and the wine nicely.

Start by thinly slicing the strawberries and limes.  Place half of the strawberries and limes in a tall pitcher.  Save the other half in a tightly sealed container for garnish.

Pour the rose’ wine and the Zaya Rum into the pitcher.  Cover the pitcher and place in the refrigerator for 4-24 hours.  We made ours the night before for a get-together we were having the following day.

Tickle Me Pink Rose’ Sangria

Prior to serving, add 4 cups of Diet Sprite, ice and stir.  We prefer Diet Sprite instead of regular.  Many sangrias can be overly sweet which overpowers the flavors in the drink. The Diet Sprite achieves the bubbly essence of the sangria without the extra sugar and sweetness.

As you serve your guests place a few slices of strawberries and limes in each glass.  It’s a delicious, easy and fun refreshing summer sipper.

The Royal Hurricane

The Royal HurricaneOur week has felt like a hurricane!  We are hosting 3 Mexican soccer players for the Dallas Cup Invitational.  With the two full-time teenage boys that already live at our house, it has been a lot of fun, but also a lot of work.  Aside from the soccer players, we have a case of spring fever!  Thus we chose to share The Royal Hurricane with you. With all of the flurry that has been happening around The Blind Pig casa this week, we will be making this post short and sweet.

This tasty drink is easy to make and even easier to drink.  Shhh!  This just might be the recipe that Royal Caribbean is offering on their cruises for a limited time. (wink, wink) So if you are planning a cruise or just wishing you were, try this easy, tasty and fresh recipe for yourself.

One of the things that we like about this drink is its amazing presentation. Who needs a fancy garnish when you get this beautiful ombre of red, orange and yellow hues?  It’s like a sunset in a glass.

The ingredients are simple: 1 1/2 ounce of Zaya Rum, 3 ounces of orange juice, 3 ounces of pineapple juice, a splash of Grenadine, and an extra 1/2 ounce of Zaya Rum float.

The directions are even easier.  Pour ingredients over ice, add a splash of Grenadine and top with the extra 1/2 ounce of Zaya Rum!   Now you are ready to sail away to the Caribbean even if it is only in your own backyard.

Helpful hint:  This Royal Hurricane has a larger volume than most drinks on our site.  Make sure to start out with a tall glass or schooner.

This drink is the perfect sipper for pool side parties and barbecues this spring and summer.  Try it out and let us know how you liked it!

Do You Fondue?

fondue 3 waysDo you fondue? We are surprised to learn many people have never tried this delicious and easy dessert with many variations.  We show you three of our favorites today.

Fondue is a Blind Pig Family favorite.  We have many great memories of sitting outside near the fire in the evening and culminating the night by chowing down on some heavenly dessert fondue.  We like all kinds of fondue, but it seems like the people in our family with the sweet tooth always win out and expect dessert fondue when they hear the name.

Today we are bringing you 3 easy, fresh, and tasty ways to have fondue. These three delicious options take very little prep and if your house is like ours, there is very little clean up.

Prior to making fondue, we always prep our dipping ingredients.  Our family favorites are: sliced strawberries, chopped apples, marshmallows, cubed angel food cake, graham crackers, sliced bananas, and popcorn. Other great dippers are pretzels, raspberries, blackberries, sponge cake, and brownies. Basically anything that tastes good covered in chocolate or caramel — which is basically everything.  Right?

 

Option 1:  Kerrygold Chocolate Fondue.  This creamy fondue is made with  1 12 ounce bag hershey’s milk chocolate chips, 1/4 cup of milk, 1 ounce of Kerrygold Irish Cream, and a tablespoon of peanut butter.  Place all ingredients into a fondue pot or a small saucepan on the stove — low heat. Stir ingredients until smooth and creamy.  When you are ready, pass out the skewers and let the dipping begin!

Option 2: Espresso Chocolate Fondue.  This is a great option for the coffee lovers in your life.  Follow the directions listed above for Kerrygold Chocolate Fondue.  Add 1 ounce of Caffe Borghetti Espresso Liqueur. Stir until smooth and then dip!

Option 3: Nutty Butter Rum Fondue. This fondue takes a different turn and is not made with chocolate, but with  caramel. The caramel flavor of Zaya Rum compliments this fondue nicely. Put 1 3/4 cup of brown sugar and 1/2 cup of water in a saucepan over medium heat.  Stir until the sugar is dissolved.  Bring to a boil for 6-7 minutes.  Stir in 1 tablespoon of Zaya Rum and cook for about a minute.  Remove from heat and stir in the 6 tablespoons of unsalted butter until melted.  Stir in 1/2 cup of half and half until the mixture is smooth.  Finally stir in 1/2 cup of chopped peanuts. This fondue is great with popcorn and apples.  It makes an excellent Fall treat.

Fondue can be prepared ahead of time and reheated once you are ready to serve.  It is fun to make the Kerrygold Chocolate Fondue as a base.  Separate the fondue into small little ramekins or shot glasses for guests to use as their own dipper.  Just make sure that you serve the fondue warm.

Many of our followers ask us, “What do you do with the food and drinks you make for The Blind Pig?”  The answer is that we eat it!  If we make something that doesn’t pass our taste testers, we don’t share it with you.  Here is a look at the rest of the story, after the posed pictures are complete.

Mint to be Irish

This tasty little cordial made with Kerrygold Irish Cream, Zaya Rum and Branca Menta will have your dancing an Irish jig in no time.

Hello friends! We are starting spring break this weekend, and we are looking ahead to St. Patrick’s Day.  We both come from Irish ancestors. Craig’s grandmother’s maiden name was Gertrude Holmes. Rhonda’s grandmother was Mary Dorothea O’Donnell, and Mary Dorothea’s father was Patrick O’Donnell.  Can you really get any more Irish than that?   Whether you are Irish or just want to be, we have a fun little cocktail for you to toast your lads and lassies.  You will believe that you were Mint to Be Irish.

Just like the lucky three leaf clover, this cocktail is made with three delicious spirits — Kerrygold Irish Cream, Zaya Rum, and Branca Menta.

Add 2 ounces of Kerrygold Irish Cream, 1 ounce of Zaya Rum, and 1/2 ounce of Branca Menta to a shaker.  Top with a scoop of ice and shake for 20-30 seconds.  Pour into a small cordial glass and garnish with a mint leaf.

Yummo!  This tasty sipper will have you kissing the Blarney Stone and dancing an Irish jig.

Berry and Bright: Cranberry Rum Slush

Hi friends! We have been busy getting ready for Christmas and keeping up with our kids’ sports.  Our daughter is home from college and our house feels like grand central station, but we wouldn’t change a thing. We managed to squeeze in a fun brunch at Whiskey Cake on Sunday.  We sat at the bar and watched the bartenders make drinks.  We are easily entertained.

Today we want to share a drink with you that we adapted from our cookbook, For Goodness Taste by the Junior League of Rochester. This is the same cookbook that we found the recipe for PBIF Pie, so you know this is going to be good!

The Cranberry Rum Slush is a great beverage to serve for a holiday get together or on Christmas Eve.  It might seem weird that we are recommending a slush drink for a winter holiday.  The flavor of the rum gives this sweet drink a warm finish, and the color makes for a festive appearance.

The ingredient list is very simple.  You will need a can of frozen cranberry juice concentrate, rum, Rose’s lime juice, and fresh lime juice.  We had never purchased Rose’s lime juice before, but we easily found it at Kroger on the wine aisle near the Grenadine.  The original recipe also called for adding a little bit of sugar, but we think the drink is plenty sweet without it.  If you don’t like drinks that are too sweet or if you are just watching your calorie intake, you may be able to forgo Rose’s lime juice which is a lime flavored sweetener.  We find that when you use a high quality rum, such as Zaya Rum,  that you don’t need added sugars.

Cranberry Rum Slush

  • 1 can twelve ounces of frozen cranberry juice concentrate
  • 6 ounces of Zaya Rum
  • 1 ounce Rose’s lime juice
  • 1 ounce fresh lime juice

Put all ingredients in a blender and blend until very smooth.  Add ice and blend to a slush.

Tastes like Fall!

We shared with you weeks ago that we love Fall!  Here in Texas we are starting to wake to cool crisp temperatures and by the afternoon the weather is just right for sitting on our back deck or next to a fire in the chimenea with a smooth fall drink in hand.  The beverage we are sharing with you today tastes like fall.  That is the best way to describe it!  It is a sangria with hints of cinnamon and a smooth warm finish from Zaya Rum.  We loved our summer sangria recipe we shared with you, so we are excited to share a twist on a sangria recipe that is Fall in a wine glass.  What could be better?

True to our motto, the ingredients are easy, tasty and fresh.  The fresh fruit of apples and pears with a hint of citrus orange compliments the rum and cinnamon nicely.  We used Diet Sprite in our sangria to cut down on calories and reduce the sweetness.  This recipe tends to be very sweet, so you may want to choose a white wine that is not too sweet for your sangria, such as a Chardonnay.

Zaya Fall Sangria

  • 1 apple
  • 1 pear
  • 1 orange
  • cinnamon sticks
  • 1 bottle of white wine
  • 1/2 cup of  Zaya rum
  • 4 cups of lemon lime soda 

Slice fruit or cut into chunks.  Place in tall pitcher with 3-4 cinnamon sticks.  Pour bottle of wine in pitcher.  Add 1/2 cup of rum. Stir.  Place in refrigerator to chill for 4-5 hours.  Prior to serving, add 4 cups of lemon lime soda.  Stir, serve and enjoy.

Zaya Rum Manhattan

And… we’re back!  We took a little break from The Blind Pig Blog last week to celebrate someone’s birthday.  We aren’t naming names or pointing out that someone is a year older, but…

birthday picTo commemorate this great occasion, I asked Craig what his personal signature cocktail would be.  He immediately chose The Zaya Manhattan.

zaya manhattan 5The Zaya Manhattan is a twist on the classic Manhattan cocktail that is typically made with whiskey.  The Zaya Manhattan substitutes Zaya Rum for the whiskey which creates an unexpected silky texture.

zaya manhattan 6We have introduced two of this drink’s major ingredients, Zaya Rum and Carpano Antica Formula to you in posts like, Zaya Bananas Foster and our Sangria recipe. If you typically like classic cocktails, you are in for a real treat with this unique flair.

The Zaya Manhattan

  • 2 oz. Zaya Rum
  • 2 oz. Carpano Antica Vermouth
  • 2 dashes of orange bitters
  • 1 slice of orange for garnish

Combine rum and vermouth in mixing glass with ice.  Add two dashes of bitters.  Stir and strain into fresh martini glass.  Garnish with slice of orange.  Enjoy.
