The Blind Pig Berry Festival

Fresh vegetables and fruits are one of our favorite parts of summertime blog posts, which is why one our most used tag lines is: Easy, Tasty, Fresh!  As we looked back at past blog posts, we realized some definite patterns in our posts.  One pattern that overwhelmingly stood out to us was how many recipes that we had with berries.

Berries are the best — nature’s candy! Berries complement many cocktail and dessert recipes, so this week we are going to feature some of our past posts that included berries, such as, Strawberry Prosecco Cake or Tequila Strawberry Lime Ice Cream Pie, both of which we have made recently at The Blind Pig household.   Welcome to our Berry Festival by taking a look back with us.  Perhaps this is a good time to try out one of these fabulous recipes that you haven’t tried yet.

Strawberry Prosecco Cake

This dessert requires a little extra effort, but is certainly worth the effort.  The sponge cake is drenched in prosecco and frosted with a whipped cream frosting.  Delish!  It’s the ultimate summer dessert.

Tequila Strawberry Lime Ice Cream Pie

Tequila Strawberry Lime Ice Cream Pie is an easy dessert that will impress family and friends.  The salty pretzel crust pairs nicely with the sweetness of the strawberry ice cream and tequila.

Prosecco Summer Dessert

Prosecco Summer Dessert is such an easy summer dessert, you will wonder why you haven’t made it sooner.  Made with angel food cake, fresh berries, cool whip and vanilla pudding, it is ready for guests in no time.

Raspberry Margarita

The Raspberry Margarita is a great twist on a skinny margarita classic. It is perfect for summertime pool sipping.

We couldn’t complete this post without suggesting an easy berry lemonade to fix for your picnics and lake trips.  A few simple basic ingredients and you are good to go with some spiked berry lemonade!!

No Fuss Treats for a Super Super Bowl Party

Have you heard that we are kind of excited about the super bowl at The Blind Pig house?  Believe it or not, we are not going to have a huge party, because we want to be able to focus on the game (and commercials). We are only having a few peeps over.  Whether you are having a huge party or watching the game with just a small group, we thought we would highlight a few of our recipes that can be game day ready in a flash!

We are breaking this post into three categories: beverages, sweet stuff, and munchies.  To find what you are looking for you can scroll to the category you want or take your time and explore all of it.

Large Batch Drinks: For the big game you may not want to spend your whole time in the kitchen mixing drinks.  We get it!  That is when it is convenient to have a large batch ready to go.  A sangria is always a winning large batch recipe.  You can fix a day or hours ahead of your party. Our favorites are  Bianco Sangria and Carpano Antica Sangria.  If you have a punch bowl, you cannot go wrong with a delicious punch. Although Jingle Gin Punch was intended for the Christmas season, it is a winning cocktail year round.  You can always re-name it Victory Punch for the party.  Seagram’s Peach Punch is also easy and a crowd pleaser at the same time.  All you need is some Seagram’s vodka, sliced peaches, and lemonade.  Can’t find peaches in the grocery store this time of year?  Add any fresh fruit to give your punch a winning appearance.

Mix it Up:  If mixed cocktails are what your crowd is into and you don’t mind spending some time away from the game, here are some cocktails that will help you score points with your friends.

We introduced you to Arrowhead Punch in last week’s post.  This red beverage is what our friends are going to be served during the game.  Another great red beverage is The Love Triangle.  We originally created the Love Triangle for our first Valentine’s Day, but it is a winner anytime of year.

A good play that always works is a great Skinny Margarita!  Other margs that can be sipped on at kickoff are: Merry Margarita and Strawberry Basil Margarita.

Fernet and Coke is the drink of choice for Argentinians when they watch a big football (soccer) game.  Maybe it’s time that Americans are introduced to this great beverage while watching their favorite sport?

Sweet Stuff:  This is Rhonda’s favorite category.  Not only are these treats easy to make, but they are sooo delicious.  If you walk in to a Super Bowl party with one of these in your hand, you will gain a lot of fans.  The first one that moves our chains is Borghetti Brownie Caramel Delights, all you need is a brownie mix, some Rolos and some Caffe’ Borghetti Espresso Liqueur.  Dip these in chocolate and you are good to go!

Rhonda took our Easy Espresso Cake to work this week for a super bowl pig out.  Rename it Chiefs Kingdom Cake.  Decorate with some Chiefs flags and your crowd will be dancing like Travis Kelce. Two other easy treats are Salted Whiskey Caramel Corn and Twisted Missouri Mud Brownies.    You can not go wrong with some fondue at your party.  Make Caramel or Chocolate fondue with some sliced fresh fruit and cubes of sponge cake.  Field Goal!!

Munchies: If you want to serve some substantial munchies at your party, Cola and Whiskey Brisket is a good place to start. Serve with some Corralejo Lime Guac and Tequila Ceviche.  Yummo!

Umbrella-worthy Drinks for Summer

We’ve had a lot of fun posting and sharing with you this summer.  Although summer is not over yet, and here in Texas we still have many hot days to get through before we feel the first cool breeze of fall, we thought we would take time to look back at past posts and share with you our all-time umbrella-worthy cocktails.  What is an umbrella-worthy cocktail?  It is a cocktail that is especially good to drink beach or poolside that is not too heavy, can cool you down, and doesn’t look bad with an umbrella accessory.  Ready to see what drinks we picked?  Well, here you go….

The Royal Hurricane

The Royal Hurricane

If there ever was a drink that was meant to be adorned with a cute umbrella, it was this one.  High on flavor, freshness, and overall summer appeal, The Royal Hurricane is a hit at any pool party or sunset cruise.

Italian Mojito

The Italian Mojito has a great flavor with a zip of mint to help any hot summer day feel a little bit more refreshing.  Serve with crushed ice to up the umbrella factor.

La Branca

Let’s party like they do in the Mediterranean and enjoy life like the Italians.  Whether you are gazing out at the blue waters of the Mediterranean or the water in your local lake, this yummy alternative to the usual margarita is sure to put some flair into your afternoon.

Paloma

Rhonda’s go-to drink on a hot summer day.  It’s so easy to make and so refreshing.  You can’t go wrong with a Paloma.  It will make you feel like you are on a beach in Mexico watching an amazing sunset over the Pacific.

Day Drinking

The very name of this easy, light cocktail just begs for a cute umbrella.  As a close friend to the Paloma, no need to stop at just one.

Spiked Watermelon Lemonade

Just looking at this drink you know it is going to be a crowd-pleaser.  It is refreshing, sweet, and has summertime fun written all over it!

Grown Up Berry Lemonade

Who doesn’t crave refreshing lemonade on a hot summer day?  Make sure the kids know that this one is for mommy.  It is easy to make on short notice and long on summertime satisfaction.

Some Like It Hot

This drink turns up the heat, but satisfies on a hot day.  If you are into spicy drinks, this one is calling your name.  Don’t forget the umbrella!

Tequila Watermelon Fizz

The Tequila Watermelon Fizz is a very easy drink to make on the go at the lake or the beach.  It is light on ingredients and even lighter on calories.  No guilt here while you are sipping this in your bikini by the pool.

Strawberry Basil Margarita

The Strawberry Basil Margarita has been our cocktail of the summer.  What tastes more like summer than some strawberries combined with the zip of fresh basil?  It is truly a treat for all of your senses.

Let Freedom Ring with a Strawberry Basil Margarita

Hey Blind Pig Friends, how was your Fourth of July?  Ours was very low key.  We stuck close to home and hung out by the pool.  While soaking up the sun we got a hankering for some Strawberry Basil Margaritas.  Our garden has been overflowing with herbs this summer thanks to the extra rain that we have been getting this season.  It is a shame to let all of those herbs go to waste without capitalizing on the fresh twist that they can add to cooking and mixing cocktails.  We know that Strawberry Basil Margaritas are not our own invention and are not anything new on the up and coming bar scene, BUT since this is our blog we thought we would remind you about a crowd pleasing summer cocktail.  We included our “Umbrella Worthy” stamp of approval on this recipe, as well.

To make this delicious drink you will need fresh basil, fresh strawberries, Monin Strawberry Flavored Syrup, agave nectar, fresh limes and your favorite tequila.  When making margs we always start from our basic Skinny Agave Margarita recipe.  However, since we used the Monin Strawberry Syrup, we backed off of the agave nectar slightly.

Place the tequila, strawberry syrup, agave nectar, and lime juice in a shaker over ice and shake for 20-30 seconds.  Pour into margarita glass filled with ice — we used sonic ice! Take a basil leaf and clap it between your hands.  This releases the flavors and aroma of the basil.  Place in cocktail.  Garnish with fresh sliced strawberries, and enjoy!
